Happy Harry’s Pasta Salad

  • 4 cups cooked elbow macaroni or other small dry pasta
  • 11/2 tsp. salt
  • 2/3 cup lowfat sour cream
  • 1/3 cup light mayo
  • 2 tbsp. fresh chopped parsley
  • 2 tbsp. Happy Hal’s jalapeno relish
  • ¼ cup spicy brown mustard
  • 3 tsp. red pepper flakes
  • ½ cup sliced green onions with tops
  • 1 cup frozen green peas
  • ¾ cup sharp cheddar cheese
  • ½ cup diced red bell pepper
  • ½ cup diced celery
  • 1 cup diced lean ham, turkey, or chicken

Bring water to boil in large pot. Add salt and pasta. Cook al dente. Drain well and set aside. Combine next 7 ingredients in large bowl. Stir well. Add cooked pasta, onions, peas, cheese, bell pepper, celery. Toss well to coat. Add more salt to taste, cover and chill.

Top with fresh ground pepper.

Serves 6-8.
