Cowboy Hal’s Beef Soup

  • 2 lbs. of beef sirloin cut in cubes
  • 2 medium red onions
  • ¼ cup cooking oil
  • 3 tbsp. paprika
  • ½ green pepper
  • ½ red bell pepper
  • 1 medium tomato
  • ½ tsp. salt
  • 1/4 cup Happy Hal’s jalapeno relish

Saute chopped onions in oil for 5 minutes. Add beef cubes, then stir. Cover and let steam for about 15 minutes. Add paprika, peppers, Happy Hal’s, tomato, salt and stir. Add ¾ cup water. Cover and let stew for 30 minutes or until meat is tender.

Serve with red skin potatoes or noodles with French bread.
