Cathy’s Lowfat Cole Slaw

  • ¼ Cup cider vinegar
  • 3 Tbsp. vegetable oil
  • 2 tbsp. Happy Hal’s jalapeno relish
  • 1 lb package of supermarket coleslaw
  • 1 small carrot
  • 1 clove fresh garlic
  • 1 tsp. salt
  • 6 fresh green onions
  • fresh ground black pepper

Mix vinegar, oil, Happy Hal’s, and garlic in large bowl. Add cabbage mixture and carrot. Mix thoroughly. Refrigerate for 20-30 minutes. Add chopped onions, salt and toss again.

Top with fresh ground black pepper.
