- 1 can (16oz.) black beans
- 1 ½ cup fresh, frozen or canned corn
- ½ cup chopped red pepper
- ½ cup chopped sweet onion
- 1 clove crushed garlic
- 1 large tomato
- 2 tbsp. Happy Hal’s jalapeno relish
- 2 limes ¼ cup fresh cilantro
- 1 teasp.
- Salt
- fresh ground black pepper
Drain beans, rinse thoroughly in strainer. Rinse again and let drain completely. Drain any water from corn.
Mix corn, beans, red pepper together. Squeeze juice from limes into small bowl. Add Happy Hal’s, garlic, and salt to lime juice. Pour over bean/corn mixture and thoroughly mix. Cover and chill in fridge until ready to serve.
Just before serving, add fresh cilantro, tomatoes and black pepper.
