Jalapeno Black-Eyed Pea and Rice Casserole

  • ½ cup chopped onion
  • 1 tbsp. melted butter
  • 1 lb lean ground beef or 1 bag veggie burger crumbles
  • 2 (15oz.) cans black eyed peas
  • ¼ cup Happy Hal’s
  • 2 cups cooked long grain rice
  • 16 oz. can tomatoes, drained and chopped
  • 1 cup sharp cheddar cheese, grated

Saute onion in butter until tender. Add ground beef and brown. Stir in peas, Happy Hal’s, rice and tomatoes. Mix well. Spoon mixture into a 2 quart casserole. Sprinkle cheese over top and bake at 350 for 20 minutes, or until cheese is melted.

Serves 6-8.
