Irish Potato Casserole

  • ¼ cup butter
  • 2 tbsp green pepper, chopped
  • 2 cups cheddar cheese
  • 3 tbsp. Happy Hal’s
  • 1 ½ cup milk
  • 1 medium onion, chopped
  • 2 ½ tbsp. flour
  • 1 tbsp. pimiento, chopped
  • 3 cups potatoes, cooked and chopped

Cook onion and pepper in butter for 5 minutes. Add pimiento and flour; stir well. Add milk; stir. Cook until thick. Salt and pepper to taste. Add potatoes. Pour into greased 1 ½ quart casserole. Top with cheese. Bake 30 minutes at 350°.
