Spinach Quiche

  • 2 pkgs. Frozen chopped spinach (thawed and drained)
  • ½ lb. fresh sliced mushrooms
  • 1 large chopped onion
  • 3 eggs
  • ½ pint half and half
  • 1 lb grated Monterey jack cheese
  • 1 lb grated cheddar cheese
  • ¼ cup Happy Hal’s
  • 2 (9”) pie crusts

Mix cheeses with spinach, mushrooms and onions. In separate bowl; beat eggs and ½ and ½ together. Pour mixture of spinach in each pie crust. Pour egg mixture over spinach.

Bake 45 minutes at 350°.
