- 2 pkgs. Frozen chopped spinach (thawed and drained)
- ½ lb. fresh sliced mushrooms
- 1 large chopped onion
- 3 eggs
- ½ pint half and half
- 1 lb grated Monterey jack cheese
- 1 lb grated cheddar cheese
- ¼ cup Happy Hal’s
- 2 (9”) pie crusts
Mix cheeses with spinach, mushrooms and onions. In separate bowl; beat eggs and ½ and ½ together. Pour mixture of spinach in each pie crust. Pour egg mixture over spinach.
Bake 45 minutes at 350°.
