Hal’s Shrimp Casserole

  • 1 cup chopped onions
  • 1 cup chopped celery
  • 2 tbsp Happy Hal’s jalapeno relish
  • 3 cloves garlic, chopped
  • 1 stick butter
  • 1 can cheddar cheese soup
  • 1 can cream of mushroom soup
  • 1 small jar chopped pimiento
  • 1 ½ cup cooked shrimp, sliced
  • 2 ½ cup cooked rice
  • 1 cup chopped green onions
  • 1/3 cup chopped parsley
  • ¾ tsp black pepper
  • Italian Progresso Crumbs

Cook onions, HH, garlic, celery in butter until tender. Add soup, parsley, green onions, shrimp and pimiento; mix. Stir in rice and seasoning. Put in casserole. Spread with Italian Progresso Crumbs.

Bake about 30 minutes at 350°.
