- 3lbs. ground beef
- 2 onions, chopped
- 1 chopped green pepper
- 1 bay leaf
- ½ tsp. oregano
- 2 pinches basil
- ½ tsp. cumin
- ½ tsp freshly ground black pepper
- 1 tbsp. paprika
- 1 can tomato soup
- 1 28 oz. can tomatoes
- 6-8 tbsp. chili powder
- 2 cans kidney beans
- 1 ½ tsp. sugar
- 1 ½ quarts light beef stock
- ¼ cup Happy Hal’s jalapeno relish
Brown ground beef in stock pot. Add onions, garlic, green pepper, bay leaf, oregano basil, cumin, pepper, paprika, jalapeno relish, sugar chili powder. Cover, and sauté 10 minutes. Add salt, soup, tomatoes, stock. Cook liquid down slowly 1 ½ hours, stirring occasionally. Add kidney beans and cook additional ½ hour.
