Chili Manicotti

  • 1 pkg manicotti shells
  • Large container of cottage cheese
  • 1 cup grated cheddar cheese
  • 2 eggs, beaten
  • 3 tbsp. Happy Hal’s
  • ¼ cup chopped onion
  • 1 clove garlic, minced
  • 2 tbsp. olive oil
  • 2 cans chili beef soup
  • ½ cup water

Cook onion and garlic in hot oil until limp. Add soup and water, simmer on low. Cook manicotti shells, rinse with cold water. Combine cottage cheese, ½ cup cheddar, eggs, and Happy Hal’s.

Stuff about ¼ cup into each shell and serve!.
