| Happy Hal's Black Bean Bruschetta |
|
2 cans black beans, drained and rinsed
2 cans shoepeg corn, drained ( I prefer 1 can, as I am not a corny fan)
1-2 cans diced petite tomatoes (use 2 if you are not corny fan)
red onion, diced
2-4 tbsp. Happy Hal's jalapeno relish (to taste)
3/4 cup balsamic vinegar
1/2 cup olive oil

Mix 1st 5 ingredients in a bowl. Add vinegar and oil and stir until evenly coated. Use more oil or vinegar, as needed. Refrigerate for at least one hour. Serve with scoops tortilla chips, crunchy garlic bread slices (I buy them in the bag, at the deli at Stauffers) or small filo dough cups. I love to put the bruschetta on the bread,or in the filo cups, top with grated parmesan cheese and heat in toaster oven until the cheese melts....Yummmy.... you can't just eat one!!!
